MANGO MOUSSE

Mango mousse is a perfect dessert which is eggless, no bake and easy to make. It is rich, refreshing and naturally vegetarian.


Ingredients

1.    Digestive biscuits – 12

2.    Butter – 3-4 Tbsp

3.    Mango puree – 1½ cup (3-4 mangoes)

4.    Mango cubes – 1 cup

5.    Whipping cream – 1 cup

6.    Honey – 4 Tbsp

7.    Cream cheese – 200 gm (optional)


Preparation

1.    Crush the biscuits and mix well with butter.

2.    Layer it at the bottom of the serving bowl and press tightly. Refrigerate for 10-15 minutes.

3.    Beat the cream to a light fluffy texture and mix the mango puree and honey and beat well.

4.    Add the softened cream cheese and mix well. Pour on top of the refrigerated biscuit mixture and keep aside.

5.    Cook the mango cubes till it softens. Cool it and garnish on top of the mousse.

6.    Refrigerate for few hours.


Tips

1.    Cake can be used in place of biscuit mixture.

2.    If the mangoes are not very sweet then add condensed milk or sugar powder.

3.    Mango essence can also be added.
