This mousse perfectly blends the rich bitter notes of dark chocolate with vanilla and iconic Indian dark rum. This dessert tastes remarkably rich and yummy.

Ingredients

1.    Dark chocolate – 250 gm

2.    Whipping cream – 300 ml

3.    Powdered sugar – 60 gm

4.    Vanilla essence – ½ tsp

5.    Old Monk Rum – 2 Tbs

6.Chocolate chips/shavings for garnishing

Preparation

1.    Melt the chopped dark chocolate with 100 ml of whipping cream in a double boiler. Keep aside and cool lightly’

2.    Add the rum and mix well.

3.    In another bowl beat the rest of the cream with powdered sugar and vanilla essence till it becomes thick or peaks forms.

4.    Add this cream mix to the chocolate mix, little by little, saving something for garnishing.

5.    Arrange the mix in small glass bowls and garnish with left over cream and chocolate chips/shavings. Refrigerate for at least 4 hours or till it sets.

Tips

1.    Milk chocolate can also be used in place of dark chocolate for a sweeter version.

2.    For a non-alcoholic version use Old Monk essence.
