BANANA ALMOND CAKE

This is a soft ultra moist cake loaded with real banana flavour.


Ingredients

1.    Fully ripe banana – 300 gm

2.    Caramel – ½ cup

3.    Maida – ½ cup

4.    Milk powder – 2 Tbsp

5.    Almond flour – ½ cup

6.    Baking powder – 1 tsp

7.    Baking soda – ¼ tsp

8.    Olive oil – ½ cup

9.    Salt – a pinch

10. Eggs- 3

11. Vanilla essence – 1 tsp

12. Brown sugar – ½ cup

13. Cloves – 2

14. Almonds – ½ cup


Preparation

1.    Powder the sugar with cloves and keep aside.

2.    Mash the bananas and keep aside.

3.    Mix maida, almond flour, baking soda, baking powder and salt.

4.    Beat the eggs with vanilla essence. Add sugar powder. Beat well.

5.    Add olive oil. Beat well.

6.    Add caramel and mix well.

7.    Add mashed bananas and mix well.

8.    Add the maida mix, little by little, and fold slowly.

9.    Thinly slice the almonds and coat with a Tbsp of flour. Slowly mix into the cake mixture.

10. Transfer the mixture to a baking tray and garnish with some thinly sliced almonds and bake in a preheated oven at 170 degrees for 45 minutes or until done.


Tips

1.    Any odourless oil or butter (100 gm) can be used in place of olive oil.

2.    Almond flour can be replaced with maida.

3.    Maida can be replaced with wheat flour also.

4.    Any nuts can be used in place of almonds.

5.    Choco chips can also be added.
