CURRY LEAVES PANEER

This is an easy to make paneer recipe which is flavourful and can be prepared in minutes.



Ingredients

For the masala

1.    Cloves – 3

2.    Peppercorn – ½ tsp

3.    Coriander seeds – 1 Tbsp

4.    Cummin seeds – ½ tsp

5.    Cinnamon stick – 1”

6.    Fennel seeds – ½ tsp

7.    Red chillies – 3

8.    Garlic cloves – 10

9.    Curry leaves – ½ cup

For tempering

1.    Oil – 2 Tbsp

2.    Chopped garlic – 1 tsp

3.    Chopped ginger – 1 tsp

4.    Green chillis slitted – 2

5.    Curry leaves – few

6.    Chopped onion – 1 bib

7.    Salt

8.    Turmeric powder – ¼ tsp

9.    Lemon juice of half lemon

10. Coriander leaves chopped – 1 Tbsp

11. Panner cubed – 200 gm


Preparation

1.    Dry roast the spices for the masala. Cool and make a coarse powder and keep aside.

2.    Heat oil in a pan. Add garlic, ginger, green chillies and curry leaves. Sauté for few seconds.

3.    Add onions. Sauté till it turns light brown.

4.    Add turmeric powder, salt and the roasted masala powder. Mix well. Sauté for few seconds.

5.    Add paneer and mix well slowly. Keep stirring for few minutes till paneer is cooked on low flame.

6.    Adjust the salt and remove from flame.

7.    Sprinkle lemon juice and coriander leaves.


Tips

1.    Tofu can be used in lieu of paneer for a vegan version.
