BURNT GARLIC RICE

This is an Indo Chinese dish which is quick and easy to prepare and has a distinct smoky flavour from deeply fried garlic.

Ingredients
1. Cooked rice – 1 cup
2. Chopped beans – ½ cup
3. Chopped carrots – ½ cup
4. Chopped capsicum – ½ cup
5. Chopped celery – 1 Tbsp
6. Chopped spring onion – 1 spring
7. Chopped garlic – 2 Tbsp
8. Chopped green chilli – 1 tsp
9. Soya sauce – 1 Tbsp
10. Black pepper powder – ½ tsp
11. Sugar – ½ tsp
12. Vinegar – 1½ tsp
13. Red chilli sauce – ½ tsp
14. Salt
15. Oil – 2 Tbsp.
16. Butter – 1 Tbsp
Preparation
1. Heat oil and butter in a pan. Add chopped garlic and fry till it becomes brown. Remove to a bowl and keep aside.
2. Add chopped spring onion to the same pan along with celery, carrots, beans and green chilli. Add pepper and salt.
3. Sauté on high flame for 3-4 minutes till vegetables are almost cooked.
4. Add capsicum and mix well. Lower the flame and add soya sauce, chilli sauce and vinegar. Mix well.
5. Add cooked rice and sugar. Slowly mix. Adjust salt and add half of the fried garlic and sauté for a minute,
6. Add some chopped spring onion greens and remove from fire. Garnish with rest of the fried garlic and serve hot.
Tips
1. Vegetables like cabbage, yellow corn can be added.
