TENDER JACKFRUIT STIR FRY (IDI CHAKKA THORAN)

This is a vegan stir fry which is an aromatic and delicious side dish popular in Kerala.

Ingredients
1. Tender jackfruit – 500 gm
2. Coconut grated – 1 cup
3. Green chillies – 3 or 4
4. Shallots – 5 (optional)
5. Curry leaves – few
6. Cummin seeds – 1 tsp
7. Turmeric powder – ½ tsp
8. Salt
9. Oil – 2 Tbsp
10. Mustard seeds – 1 tsp
11. Whole red chilli – 2 or 3
Preparation
1. Slice the green part and hard centre of the tender jackfruit and discard.
2. Cut the jackfruit into small pieces (1 ich cubes) and immediately immerse them in water.
3. Strain the jackfruits and sprinkle salt and turmeric powder.
4. Add ½ cup of water and pressure cook for a whistle or two.
5. Slightly mash the cooked jackfruit and keep aside.
6. Coarsely grind the green chillies, cummin seeds, shallots, curry leaves and coconut. Keep aside.
7. Heat oil in a pan. Add mustard seeds. Once they crackle add whole red chillies and curry leaves.
8. Sauté for a minute on low flame. Add the cooked jackfruit and mix well.
9. Add the ground mixture and mix well. Cover and cook for a couple of minutes.
10. Mix and serve hot.
