MANGO AVOCADO SALAD

This is a delicious healthy salad with juicy mango chunks along with avocado, cucumber and fresh herbs in a tangy lime dressing. It can be served as a side dish or a refreshing bowl of main dish.

Ingredients
1. Lime juice – 2 Tbsp
2. Maple syrup or honey – 2 Tbsp
3. Olive oil – 1 Tbsp
4. Salt to taste
5. Pepper – ½ tsp
6. Ripe mango cubes – 2 cups (2 large mangos)
7. Onion – ½ cup diced
8. Cucumber – 1 cup dices
9. Avocado – just ripe avocado 1 diced
10. Fresh coriander leaves – 2 Tbsp
11. Fresh mint leaves – 1 Tbsp
12. Fresh basil – 1 Tbsp
13. Feta cheese (optional) – 2 Tbsp crumbled
14. Dry roasted/boiled peanuts – ¼ cup
Preparation
1. Mix the lime juice, maple syrup, oil, pepper and salt in a bowl.
2. Place the mango cubes, onion, cucumber, avocado, mint, coriander and basil into a large bowl. Add feta cheese and peanuts.
3. Pour the lime mixture into the bowl and toss the ingredients and coat everything with the dressing.
4. Adjust any seasoning to taste.
5. Serve chilled.
