Jackfruit Unniyappam ( Sweet Jackfruit Rice Fritters)

This is a traditional Kerala delicacy which gives a crispy exterior and a soft flavourful centre.

Ingredients
1. Roasted rice flour – 2 cups
2. Jackfruit pulp/puree – 1½ cup
3. Jaggery powder – 300 gm
4. Water – ½ cup
5. Wheat flour – 2 Tbsp
6. Rawa/semolina – 1 Tbsp
7. Coconut bits – ½ cup
8. Sesame seeds – 1 tsp
9. Cardamom powder – 1 tsp
10. Baking soda – 1 pinch
11. Oil and ghee for frying
Preparation
1. Make jaggery syrup with ½ cup water. Keep aside.
2. In a bowl mix the rice flour, wheat flour and rawa with jackfruit pulp.
3. Add jaggery syrup and mix well.
4. Fry the coconut bits and sesame seeds in ghee until brown and add to the mix.
5. Add cardamom powder and mix well.
6. The batter should be like idli batter.
7. Add baking soda and mix well just before heating oil.
8. Heat oil and ghee (1:1) in an appe pan or normal kadai.
9. Pour the batter, little by little, and fry till golden brown, flipping in between.
Tips
1. For jackfruit pulp grind seedless jackfruit bulbs (around 25-30 pieces) to a smooth paste without adding water.
2. Coarse rice flour is ideal for this recipe.
3. Instead of adding ghee it can be fried in oil alone also but ghee gives a better taste.
4. Adjust quantity of jaggery as per sweetness of jackfruit.
